Building a balanced South Indian plate
- Idli/Dosa: Steamed or lightly oiled, paired with sambar and vegetable-loaded coconut chutney for fibre
- Millets over polished rice: Ragi or jowar dosa and idli add fibre and slow-digesting carbs
- Sambar and rasam: Both are protein- and fibre-rich thanks to lentils and vegetables
- Curd rice: In moderation, a good source of probiotics — pair with a vegetable side for balance
A sample day
- Breakfast: Ragi dosa with sambar and chutney
- Lunch: Brown rice, sambar, poriyal (stir-fried vegetables), and curd
